If You Love Old Forester, Check Out This New Whiskey From the Brand's Former Master Taster

Jackie Zykan is a modern legend in American bourbon. As master taster for Old Forester, she had a hand in crafting some of the brand's most beloved labels, including Birthday Bourbon and President’s Choice. In fact, she was the first woman to have her signature on an Old Forester label in the company’s entire history.

So when someone like that leaves a prestigious role to make something all her own, drinkers pay attention. Back in 2022, Zykan departed Old Forester to build her own label, Hidden Barn, in partnership with Neeley Family Distillery. Since its launch, Hidden Barn has garnered a reputation for its unique releases, most noticeably its Series One collection. Now, Hidden Barn has revealed the tenth release in the series, Slow Fade, which is named for its sweet, “slow fade” on the finish.

Slow Fade has a mash bill of 70 percent corn, 20 percent rye, and 10 percent malted barley. After fermentation, the liquid was double-pot distilled with wild-crafted Appalachian yeast, which gives the liquid its unique flavor profile. The liquid was aged in 12 different barrels for five to six years before being blended and bottled at 106.5 proof.

According to Zykan, the whiskey is “very well balanced, with brown butter, black cherry, and a bit of orange zest on the nose. Dark cacao and hazelnut lead the palate and the mouthfeel is perfectly viscous. The sweetness slow-fades on the finish, rounding out with balanced warmth and clean longevity.”

The whiskey only went through sediment filtration and did not undergo the chill filtration process. According to the brand, this gives the whiskey a deep and classic profile. The use of pot stills, wild yeast, and sediment filtration harkens back to Prohibition. Local communities painted their barns black in solidarity with distillers during Prohibition. Hidden Barn's name and logo take inspiration from that.

Hidden Barn Slow Fade features a suggested retail price of $80 per 750ml bottle and can be purchased via select retailers in Kentucky, Indiana, New York, California, Georgia, Colorado, Nevada, and New Mexico or at online retailers.
