Chicken Stuffed Sweet Potato

There is something about the cooling off wheather that just gets me excited for food! This is perfect recipe to kick off the season. Perfect for a cozy date night. Serves 2!

Ingredients:

2 sweet potatoes
1 tbsp coconut oil
2 cups spinach
8oz shredded chicken, cooked
1 tbsp pomegrante seeds
1 tsp cinnamon
salt & pepper to taste

Directions: 

Preheat your oven to 375 degrees. Put your sweet potatoes in for about an hour or until soft inside. In a medium sized skillet saute your spinach in coconut oil. After the spinach is soft throw in your already cooked shredded chicken and top with seasonings. When sweet potatoes are ready cut open and scoop out the inside and add to the skillet. Mix together and then top with pomegranate seeds. Top left over sweet potato skins with the mixture.
