For foodies or home chefs out there, cooking can be quite an immersive experience. Yes, apart from just helping you relax or serving as therapy, you get to learn a lot about different ingredients present in your kitchen. Cooking does require time, patience, and interest, of course. But, sometimes, when you are used to cooking on a day-to-day basis, some mistakes are ought to happen. At times, you put an ingredient more than it's required and that affects the entire taste of the delicacy. One such common mistake is that people often add too much salt (unintentionally) to a particular curry or even dal for that matter. If you ever happen to do something like that, don't panic. Chef Pankaj Bhadouria, through a video on Instagram, shared certain useful hacks to balance the salt in a dish.
In the caption, she says, "Pankaj ke Nuskhe: How to balance Excess Salt in Dishes! If you have over-salted your dish, here is a simple nuskha of how you can fix it!"
According to Pankaj, you can follow these points:
1) If you end up putting a lot of salt in a gravy-rich curry or dal, you can knead some dough (using wheat flour). Just add your curry to a pan and turn the stove on. Make tiny roundels of the dough and put them into the curry or dal and let it cook. These balls will soak all the excess salt from the dish.
2) Now, what can you do if the curry is dry? Pankaj suggests adding a tangy ingredient to the dish. For example, lemon juice or dahi. You can also put tomato gravy to balance the salt.

As a part of the same series, the chef often shares important cooking tips. Recently, she revealed some tricks to get the crispy paneer right. There are times when you make fried paneer but despite following the required process, the paneer chunks don't turn out as crispy as you want. Well, the chef explains that many people, while making fried paneer, prepare a mixture of cornflour or maida, dip paneer pieces into it and fry. But this is exactly where they are going wrong.
So, what's the hack here? Pankaj says that you must make a mixture of two (heaped) tablespoons of maida and two (heaped) tablespoons of cornflour. Sprinkle that mixture all over your marinated paneer chunks. After this, dip the paneer pieces into the water once, and again, put them into the same bowl. Add that cornflour-maida mixture again on those paneer cubes and toss well.
