Brewers Use Recycled Fruit and Grains in These Tasty Second-Use Beers
Aluminum cans aren’t the only thing brewers are recycling. Increasingly, brewers are making fruit beers with previously fermented fruits such as blackberries and peaches, plus pressed grape skins and stems, turning waste into beers that you’ll want to drink again and again.
Part of the trend’s popularity can be traced to surging interest in piquette. It’s a rustic French technique of turning pomace—the skins, pulp, and stems leftover after pressing grapes for wines—into a low-alcohol, wine-like beverage that’s fizzy, fruity, and often only around 5 percent ABV. The method is favored by many natural winemakers, and “we get a lot of inspiration from what is going on in that world,” says Jake Guidry, the brand director for Hopewell Brewing.
The Chicago brewery’s Neon series of sour ales features massive amounts of fruits such as cherries, raspberries, and blueberries. At first Hopewell didn’t recycle the fruit, but it started experimenting and discovered the value of second-use fruit, especially berries. That led the brewery to launch Neonette program of piquette-style beers.
Don’t expect Jamba juiciness. The brewery makes a lower-alcohol base beer then steeps the fruit, letting the subdued fruitiness shine. “We’re getting more of a prickliness and more tannins coming through,” Guidry says. “They’re going to give you a completely different experience with fruit.” Here are five great beers featuring second-use fruit. Hopewell Brewing
Neonette, 4.9% ABV
Pét-nat wines informed Hopewell Brewing’s series of Neon sour ales, which are lavishly fruited and packaged in clear glass bottles to better highlight each release’s electric hue. To make its piquette-inspired Neonette beers, the Chicago brewery makes a moderate-strength table beer, then ferments it with previously used Neon fruit such as black raspberries.

Gigantic Brewing
Funquette, 6.3% ABV
The Portland, Oregon, brewery partnered with Stillwater Artisanal and St. Reginald Parish, a natural wine producer in Oregon, on this piquette-inspired sipper. Funquette is made by pairing just-pressed pinot gris pomace with a barrel-aged saison inoculated with wild yeast and a bit of fresh wort, a.k.a. the sugar-rich broth that becomes beer. The fermented result is seltzer-fizzy, the gently cutting tartness balanced by a smidgen of fruity sweetness reminiscent of a ripe cantaloupe.

Threes Brewing
Thought Experiment Peach, 4.8% ABV
For its Thought Experiment series, Brooklyn’s Threes takes its food-friendly table beer and ages it on fruits previously used in another beer, such as blueberries and cherries. The fruits lend color and flavor, creating spritzy and colorful refreshers reminiscent of sparkling wine. This peachy release (the fruits were previously used in an oak-aged saison) would make for a perfect brunch beer, low enough in alcohol that you can crush the whole bottle.

Modern Times
Cool Zone, 3.8% ABV
In pursuit of the perfect poolside beer, the San Diego brewery infused a funky, wood-aged Belgian beer with a “frickin’ mountain” of second-use Zinfandel and Petite Sirah grapes. Modern Times then added de-aerated water to drop the alcohol to a positively crushable 3.8 percent—less boozy than Bud Light. Think of this as a fruity beer spritzer.

The Brooklyn brewery is big on recycling its grains and fruits. For example, Seconds is a low-alcohol dark mild brewed with grains originally used to make a strong imperial stout, while the spent skins and stems of Merlot grapes used to make a barrel-aged sour ale were repurposed for Little Thief. ½ a red onion

Steps for making stock:
Save bones from any leftover chicken (chicken thighs, bone-in breasts, etc. or use the bones from a whole chicken).
Put them in a pot with the red onion, garlic cloves, carrots, and parsley.
Bring to a boil and simmer on low for 3 hours.
Use a strainer or cheesecloth to separate the broth from everything else.
Pour into a heat-safe container.

Tincup Whiskey Doubles Down to Promote Avalanche Education
While this winter is seeing booming sales of backcountry skiing equipment, it’s also one of the deadliest avalanche seasons on record—so far, 31 backcountry travelers have been killed in nine states.
A whiskey company is doing what it can to help. Like a Saint Bernard coming to the rescue with a barrel attached to its collar, Tincup Whiskey has partnered with the American Institute of Avalanche Research and Education (AIARE) and Weston Backcountry to increase avalanche education and backcountry safety.
Working with ski maker Weston, Tincup has created a limited number of backcountry skis and splitboards, with special graphics created by renowned mountaineer and photographer-artist Renan Ozturk. Under the program launched today (Feb. 25), everyone who takes an AIARE course this season will be registered to win a pair. Skiers and riders can also register to win by visiting tincupwhiskey.com and testing their avalanche knowledge and pledging to continue their avalanche education.
“We’re rooted in the backcountry whiskey tradition of the Old West, where you celebrate a day of adventure with friends around a fire and cheers of whiskey,” says Lander Otegui of parent company Proximo Spirits. “This partnership should help galvanize people to be good partners in adventure and get the training they need to seek out wild places but then make it home safely.”
Known for its television ads celebrating mountaineering, Tincup has long ties to avalanche terrain. It was founded by Jess Graber, an ex-rodeo competitor who gave the wares from his first still fellow construction workers and volunteer firefighters. With help from whiskey maker George Stranahan, he named his company after the former mining town of Tin Cup, Colo., perched at 10,157 feet in the avalanche-prone Sawatch Mountain Range.
For its part, AIARE, which put 12,000 people through its courses last year, is excited about the project’s potential to further avalanche safety. “It’s great that a company known for celebrating outdoors is looking at the other side of adventuring and making sure people come home safely,” says AIARE executive director Vickie Hormuth. “And this should help extend the reach to anyone who’s recreating in the backcountry. It’s all about doing it safely and coming home to celebrate at the end of the day.” Hormuth adds that the average age of this year’s avalanche victims is a whiskey-drinking 48.

MLB Spring Preview: The Storylines to Watch This Season
After a long winter, the crack of the bat and pop of the glove have finally returned. All Major League Baseball players have reported to spring training camps, and baseball fans can once again feel the buzz of another season just around the corner. Even more exciting: The 2021 MLB season is scheduled to be a full 162 games, unlike 2020’s abbreviated 60-game season.
Spring training games––which start on Feb. 28––will offer the first taste of baseball action in four months. And after another busy offseason of trades and free agent acquisitions, everyone is eager to see which teams and players hit it out of the park (and which ones strike out). Here are five storylines that we’ll be following closely this year.
Can the Dodgers Become the First Repeat World Series Champs in Two Decades?
After seven consecutive seasons of playoff heartbreak, Clayton Kershaw and the Los Angeles Dodgers finally broke through in 2020 and won the World Series. Can they do it again? Not since the New York Yankees won three straight between 1998 and 2000 has there been a repeat World Series winner. But if there’s a team to snap this two-decade dry spell, the 2021 Dodgers are it.
The Dodgers not only retained most of their key position players––including star shortstop Corey Seager and MVP outfielders Mookie Betts and Cody Bellinger––but they also made a huge offseason upgrade by signing 2020 National League Cy Young award winner Trevor Bauer. Adding Bauer to an all-star pitching staff that already features players like Clayton Kershaw, Walker Buehler, Julio UrÃas, and David Price is borderline unfair. It’s a long season and there will undoubtedly be twists and turns, but at least on paper, the Dodgers are poised to make a serious run at going back-to-back.
Will the San Diego Padres Live up to the Hype?
About 120 miles south of Dodger Stadium lies the biggest obstacle standing in the way of a Dodgers World Series win––the San Diego Padres. 2020 was a breakout year for the Friars: They finished the 60-game season with a .617 winning percentage and won their first postseason series since 1998. Beyond collecting Ws, the team, fueled by dynamic young shortstop Fernando TatÃs Jr., quickly established itself as one of the most exciting clubs to watch.
This offseason, the San Diego front office doubled down on their success and put the Dodgers on notice. The team added a trio of frontline starting pitchers including Blake Snell, Yu Darvish, and Joe Musgrove. Additionally, they locked up their 22-year-old star shortstop with a whopping 14-year, $340 million contract. Combine these offseason moves with a very talented roster––don’t forget about former Dodger Manny Machado––and we are set for a West Coast duel between two top teams. Buckle up.
The American League’s Wide Open Battle for Supremacy
While many baseball experts put the Dodgers and Padres at the top of the heap in the National League, the American League is a much tougher call.
Even so, the AL East once again seems like the favorite to produce a World Series contender. The New York Yankees are in a good position after adding DJ LeMahieu and Corey Kluber to their already deep roster. However, they’ll have to prevail over the analytics-based approach of the Tampa Bay Rays (the reigning AL champs) and the powerful bats of the Toronto Blue Jays, who added George Springer this offseason.
The Minnesota Twins and Chicago White Sox in the AL Central could also make a run, along with the Houston Astros in the AL West. Losing Springer was a blow to the Astros, but they still have enough roster firepower and experience for a shot at the title.
A New Baseball
Home run counts have skyrocketed over the past few seasons and even prompted several high-profile pitchers to complain about juiced baseballs. While MLB officials would never admit that they had intentionally changed the baseball, the stats seemed to prove otherwise. After increasing home run counts each year, the most recent 162-game season (in 2019) saw the ball leave the yard 6,776 times––a new record.
This has led to a significant shift in the game. There has been sizable growth in strikeouts, walks, and home runs, and that has led to longer games with less action. To combat this home-run-or-bust approach to batting, MLB announced it would be “deadening” baseballs for the 2021 season. Teams were told this adjustment would mean a ball hit over 375 feet would fly about one to two feet shorter than before. Time will tell whether this effort will make a dent in home run counts or affect how the game is played, but it will be monitored closely as the season progresses.

The Return of the Fans
There’s no getting around it: The 2020 MLB season was awkward. Watching teams play in front of cardboard people was very strange. The silence after game-winning home runs? Even stranger. But now that the COVID-19 vaccine rollout has begun, teams and fans alike are hoping for more life in ballparks across the country in 2021.
Once the regular season begins on April 1, fan attendance will be subject to local guidelines. For teams that do allow fans, they will have to sell tickets to pods of fans and keep those groups physically spread out.
As the vaccine becomes more widely available, there is hope that attendance levels will be allowed to increase. And if the 2021 MLB season concludes with some sense of normalcy, that will be a big win for the sport—and for all of society.
